Final Fantasy from the NES (the original), in my opinion. I'm likely biased due to the fact that Final Fantasy was the very first RPG that I played, but still--it was really the single game that popularized the role-playing genre with its simple mechanics, design, and plotline. And it's hard to forget those endearing 5-color sprites. A true cornerstone for both RPGs and gaming in general.
